* 3 yellow tomatoes
* 4 roma tomatoes
* 3 leaves fresh cactus – prickly pear
* 1 bunch cilantro
* 2 limes
* Salt and Pepper
* 1 medium red onion
* 3 jalapenos
* 1 tablespoon olive oil
* 1 cucumber
* 1 splash of Tequila
Instructions:
Dice yellow and roma tomatoes ¼” thick. Dice red onion ¼” thick. Chop cilantro. Mince jalapeno without the seeds. Cut all the thorns off the cactus. Rinse off. Toss with salt and pepper and olive oil. Grill on both sides for two minutes. Let cool and dice ¼” thick. Dice cucumber. Toss all diced ingredients together and season with salt and pepper. Squeeze the juice of two limes in and add a splash of tequila. Add cilantro. Let sit in refrigerator for 2 hours. Enjoy!
