Ingredients for Consommé:
* 46 oz Tomato Juice
* 16 oz water
* 3 egg whites
* 10 oz Ground Beef (very lean)
* 1 Carrot (shredded)
* 1 rib of celery shredded
* 1 sprig of marjoram
* 1 sprig of Basil
* 1 yellow Onion (finely diced)
Garnishes:
* 1 oz ¼ inch diced carrots (blanched)
* 1 oz ¼ inch diced onion (blanched)
* 1 oz ¼ inch diced celery (blanched)
* 2 Eurofresh Tomatoes ¼ inch diced
* Salt and Black Pepper to taste
Instructions:
In large mixing bowl, combine tomato juice, water, egg whites, ground beef, shredded carrots, shredded celery, marjoram, basil, and very small-diced onions. Mix very well, ensure product is chilled. Place all ingredients into large stockpot, slowly bring to a simmer, stirring occasionally. Simmer for about 45 minutes. All solid ingredients will form a raft and bring all impurities to the top. After consommé is finished, use a paring knife and carefully cut a 4-inch hole in raft and remove. Using a ladle, remove consommé and strain through cheesecloth and chill. Season with salt and pepper. In soup bowl, place garnishes. Poor chilled consommé on top and serve.
